Fire & Salt is relaxed, fine-dining in a sophisticated, contemporary space. Our menu has tender meat, fish, dairy, vegetarian and vegan dishes for all tastes and appetites. Signature dishes include hand-picked beef, dry-aged for up to 36 days in Himalayan sea-salt – our name derives from the fire which seals and caramelizes the steak and the salt which seasons it.
Every dish is thoughtfully designed and matched with tempting sauces, crisp fresh vegetables, and various potato sides. Topping off a memorable meal, our desserts are skilfully constructed and beautifully decorated by our very talented pastry chef.
They are almost too good to eat… but only if you have the willpower to resist. Finally, our wine list is both varied and accessible. We have classic favourites mixed in with a few premium wines and one or two unusual finds for the buffs amongst us.

The Coach House Brasserie
Instantly feel at home in the Coach House Brasserie with its booth-seating and roaring fire in Kitty’s Corner. Upstairs, The Loft offers a more refined brasserie-style experience, and when the sun shines, a new, spacious, outdoor terrace to the front of The Coach House seats nearly 50 people in airy, heated comfort.
The menu at The Coach House includes both casual, modern dishes and traditional, hearty crowdpleasers.
Pair your meal with a drink from the full bar menu, a signature cocktail or select from a wine list designed to match and enhance the menu.

The Johnstown Estate’s welcomes you to, ‘Parterre’, a captivating garden terrace cocktail bar serving impeccable cocktails amidst natural beauty.
‘Parterre’ stands undeniably elegant, as a modern glass botanical oasis cleverly designed with a retractable roof, effortlessly transforming the atmosphere from the bright and airy embrace of daylight to the enchanting allure of the evening. This sophisticated space is perfect for casual daytime or evening cocktails and light bites in our late bar in all seasons.

Private Dining
Sometimes a special celebration demands that little something extra. Our manor private dining rooms give that extra sense of occasion, or a little privacy if needed.
We have a number to choose from, all designed in keeping with the Georgian heyday and history of The Manor.
The Burgundy is a dramatic double-height room with a minstrel’s gallery, open fireplace and double height windows.
The Willow reflects a more traditional dining room, with a Willow Pattern décor and fringed drapes with deep pelmets.
The Rose is named after Rose Prendergast who was the last Lady of the House before it was converted into the hotel it is now. Mrs Prendergast lived there for over 50 years and particularly loved this cosy room for breakfasting.
Each provides an opportunity to tailor a dining option around your specific needs.
